Parson Meat Science Education and Training Lab, tells Brownfield the new market is larger than the previous location in Columbia. “It’s located South of the Trowbridge Livestock Center, a pretty big footprint, but it does not look like a meat processing plant,” he says. “The retail market itself very much reimagined. You walk in and and you feel a little bit of the Missouri Grown model. A lot of value add products. We’ve really expanded our line on retail.” He says there’s a lot of protein options for purchase from lamb to beef and poultry, and students will be given opportunities to build recipes for jerky and bratwurst. The market is located inside the new $35 million Michael L. Parson Meat Science Education and Training Lab, which was funded by the Missouri Legislature. The Mizzou Meat Market purchased some animals at the Missouri State Fair’s Sale of Champions over the weekend, and the facility is expected to process all the meat animals sold at the event. “The first livestock that will go through the new facility will be the Sale of Champions animals and we are very proud to still be supporting that as well. We’ve processed those for almost 30 years.” Weigand says the Mizzou Meat Market is currently open Wednesdays and Fridays from 11 a.m. to 6 p.m., with plans to expand its hours as the operation grows.
